Polished and professional staff, very nice people who were happy to talk about the hotel, restaurant and menu, and to answer our questions. We started with the caviar enhancement which came with tiny bilini pancakes, shallots, chives, egg and creme fresh. That was a fun way to start our dinner. We had the sampling menu and thoroughly enjoyed oysters, scallops, lobster, duck, Wagyu beef and desserts.
