The highlight for us was definitely the dry-aged fish—something quite rare to find in Melbourne. We tried a few different types, including an 8-day aged fish, and each one had such a unique, rich depth of flavour. Hours after the dinner, I’m still thinking about the cold smoked salmon—so beautifully done—and the Argentinian red prawn was another standout. Reki mentioned that their sushi rice is made with a special aged vinegar, and I could really feel how it made the rice softer, more fragrant, and full of flavour—it elevated every bite and truly opened up the appetite. The Chirashi Don was a dream—packed with premium seafood (including uni that day!) and beautifully balanced. The chawanmushi was also memorable—they added a touch of mascarpone, giving it a silky texture and a subtle sweetness that was both comforting and unique. For dessert, the mango coconut pudding struck a perfect balance between fruity and sweet. Reki also generously shared their Nama Chokorēto, which had a rich, smooth dark chocolate flavour—amazing on its own, and I can imagine even better paired with whisky. Highly recommend Sachi to anyone looking for top-tier Japanese food in a relaxed, welcoming space. If you're curious about dry-aged fish, this is one of the few spots in Melbourne doing it right.
