How do you take a classic staple of American dining, the steakhouse, and break down the traditional thinking to create something entirely new and exciting? That was the question that acclaimed chef and restaurateur Sam Marvin (creator of the much-celebrated Los Angeles restaurant Bottega Louie) posed when he decided the time was right to reinvent what has long been the trademarks of the steakhouse genre – masculine vibe, dark rooms, fancy waiters, slabs of oversized beef and overly expensive pricing. The answer became Echo & Rig Butcher and Steakhouse, located at the charming Tivoli Village just off of Summerlin Parkway; 15 minutes from the famed Las Vegas Strip.

    Upon arrival we were guided by the hostess past various open tables such as a 4-top right near us, and instead were seated at a small 2-top in the very back corner right next to the wall-mounted fire extinguisher. Our table was rocking back and forth with any touch, thankfully a server’s assistant we notified took care of that issue. Our actual server was pretty much absent the entire time. So much so that when our steak came out extremely rare despite ordering it medium, we sent it back to have it cooked up a bit (yet again via a server’s assistant) our server didn’t even know this had even happened. Having the steak cooked-up somehow took around 15-20 minutes. In which time all of our sides were getting cold. Our server finally came around to our table saying ‘how is everything’...well, there’s no steak on our table because it was being cooked-up which again he didn’t even know about. We asked if we could get an additional side, the mash potatoes, as complimentary given the wait and that all of our sides were now cold having waited so long. He said it would be right out. The steak getting cooked-up took so long the mash potatoes came out before the steak. Then the manager finally arrived with our cooked-up steak and nervously dropped it on the table, he said next to nothing, and then hovered near our table just watching us. It was….beyond awkward. Upon receiving the bill, the mash potatoes were somehow on the bill. The server then had the audacity to argue regarding the mash potatoes and didn’t want to take that off the bill. And this killed me…the server actually asked who did we talk to regarding the comp potatoes. Uhhhhmmm….YOU!!!! Like, what?! Just…wow. No words. Terrible experience, especially given this price point. Just utterly inexcusable.

    This is 5 star Las Vegas strip quality. At offstrip and reasonable prices. Ignore the instagram shenanigans of questionable influencers and treat yourself to an amazing restaurant. The service is top-notch and they understand their dishes. Everything from the appetizers to the main dishes. And the desserts are spectacular. I've eaten in over 100 Las Vegas restaurants, and this is one of the tops. Enjoy.

    If you’re looking for privacy, great price for decent food, and good drinks… this is the place to be if you’re a Las Vegas local. We live in Peccole Ranch and we wanted a place to go without a crowd but still quality and this was it on a Sunday morning. Also, a walk away from Leone Cafe and other restaurants/ mini shops. Will be back again once I’m in a mood for steak & frites!

    The ambiance was good, but our waiter and the food was just okay. We ordered medium well but got bloody steak which had to be sent back. We did not get an opportunity to pick our sauce for our steak nor were we offered dessert. It felt like I was being rushed. The prices are low compared to other steakhouses in the area, maybe that’s why my service was low. I was disappointed especially since it was my husband’s birthday. Ugh!

    Steak ordered medium-rare. Delivered rare. Instead of putting my steak on grill for few more minutes, someone thought it better to start over with new steak. A small issue that could have been resolved in under 5 minutes turned to 30 minute problem. Server nor guest was aware of how long it would take. Manager never came around.
