Blackened pig ear was an explosion of flavor and the fried chicken with hot honey on coconut grits and peanuts was priceless. The pickled carrot and basil added freshness and acid and topped it off. The food and drink were delightful. The best part though was watching the creativity of the bartender mixing and testing trying to create the perfect cocktail, the hustle of the kitchen amidst what looked like a lot respect and comradery, and of course, catching the genius at work, Nina Compton, pouring love and care into all the things she touched.
