In showing this building some love, local businesswoman Shoes Simes has said that she hopes to help make her pub more food-led and family-friendly. In doing so she hopes to turn this local building of historical importance into an establishment for local families and friends to enjoy together. It all started 13 years ago when she first saw the building and she knew straight away that this was the pub for her and finally her dreams have come true, with a full refurbishment, this pub is now ready to be revealed to Eastbourne in all its glory. Once functioning as an old Moot Court, eventually turning into a restaurant in the 1970s, before it boomed as a pub trading as The Rainbow. It eventually changed to The Counting House and saw a new lease of life as the garden grew to be a popular haunt of all in old town. Returning with a change of name to the older style of The Rainbow, and with it a focus on food again. For outdoor reservations, please contact the restaurant directly.

Callenders is a modern , casual style dining bistro. From a romantic meal for two, to a celebration dinner for forty. The best of local produce cooked to order for you. The surroundings are relaxed and easy going. Large potted plants occupy the free spaces and original water-colours by local artists hang on the walls. Table tops are bare and minimalist set with condiments, cutlery and fresh cut flower stems. Old dishes make a fresh return, and modern classics like Thai-Style Chicken sit comfortably along-side Braised Beef Cheeks with roast potatoes and gravy.Steaks are good too and a full Char-grill section on the menu features locally shot Venison and a selection of beef cuts; T bone, Fillet and Sirloin. As you would expect all desserts and pastries are made in house, with a definite focus on classic British desserts, steamed Treacle Sponge, Crème Brule, Apple Tart, Queen of Puddings and a really beautiful creamed rice dessert served with a mango sorbet are often on the menu.

    Lovely Sunday lunch served by very enthusiastic attentive server. We had the Sunday roast for 4 and it was very tasty and plenty for us. A nice touch was the provision of a ‘doggy bag’ so that nothing was wasted. The particular advantage for us was that our wives are put off by a stacked plate, so could put on their plate what they wanted from the main bowl. The only feedback we could give is that in our opinion, the midweek food doesn’t leave many options for a ‘light lunch’ such as sandwiches or toasted sandwiches or soup.

    Wonderful food and excellent service in a warm and friendly atmosphere. Great for gluten free options. Fantastic value on Friday steak night - dessert and a small house wine/beer included in the price of your meal from the Grill menu. We love eating here, can’t wait to go again!

    Our second visit to Fork didn’t disappoint! A real gem of a restaurant with excellent food, attentive and friendly service coupled with good value! The fixed menu @ £39.50 provided a diverse set of choices to suit all palates cooked in an open-plan kitchen on full display to the diners. As a wine nerd it was also fantastic to take advantage of a £15 corkage fee which is extremely reasonable. I had scallops in a celeriac purée to start, pork tenderloin with pancetta and then an apple pie to finish. All superbly cooked and presented. We will most definitely be back!

    We were served by a lovely lady at the bar who was taking all the orders on her own, who I think was quite new to the job or to recent changes to the menu maybe. I felt for her having no support. She was very apologetic for any delay in taking orders and I could see it upset her that she couldn’t do her job to her full potential. But she certainly gave it her all. One guy seemed to bring the food to the tables and I didn’t see any other waiting staff. They were both really lovely friendly people. And it didn’t affect our visit. But I did feel they could have done with another pair of hands to support them. The food was lovely. The kids burgers were a good size and a nice quality meat. The pub itself is cosy and friendly. We will return. Thanks.
