HRB Hand Rolls are carefully prepared using a special nori (seaweed) form Ariake Bay in Japan. Speaking of which.... we recommend eating the Hand Rolls right away as nori begins to lose its crispiness once in contact with oxygen. Our rice is known as one of the best short grain rice varieties in the world and we like it warm to reveal the vinegar notes and strike balance with the temperature of the fish . We had the pre fixe menu on Christmas Day. The food was phenomenal and the space was gorgeous. We thoroughly enjoyed the dining experience and would recommend this place for special occasions. The wait for our food was on the longer side, but it was Christmas Day so I presume it was due to being short staffed on a busy dining day.
