Red Gravy offers upscale casual modern Italian fare.Chef/Owner Eric Brenner spent his first decade in the industry inside Italian kitchens. Talking up St. Louis' wide-ranging Italian eatery scene, which gets as specific as regional specialties, he says he's wanted to have a place like this since he was 18."We're going to start very simple and accessible," he says, "we'll play to the crowd and start a dialogue, then grow the menu with community input.""Simple," includes dishes like his tomato bisque, with which only has five ingredients. "It's all about the perfect balance. And that gets back to the essence of good Italian food: quality ingredients, very few, in perfect balance." Other examples include his St. Louis-style, thin-crust pizza, best compared to a flat-bread.

We had the option of a 4 course tapas style meal with or without wine pairings or a la cart. The menu offered a wide variety of options sure to please all diners. Each tapas was flavorful, melt in moth delicacies. Our waiter was very knowledgable and presented excellent pairings.the eclectic art matched an eclectic menu. The food was delicious.

We were greeted by the host team warmly and they took our jackets. We started off at the bar and had a few glasses of champagne. We were very impressed with the sommeliers Sabina and Paul. Very knowledgeable about the menu and the wine! We had to try ice wine and Paul did a fabulous job explaining to us this process. We ordered the ceviche three ways and the mussels for an app. Compliments to the Chef! We had salmon and the steak frites special. For dessert we had the banana/chai chocolate sphere. We were impressed with all the staff including the food runners. S/O to our amazing server Anthony. He was attentive, funny, and knowledgeable on the menu. It was our first time at the Summit and we have dined at all outlets on property and this might be our new favorite! Thank you for making my 32nd birthday memorable!
