We went to Baia knowing that it should be a good restaurant, however, a location that this often changes, hands. We had eaten and some of the other ritzy restaurants and although OK Same over the top. Baia it’s different! Gives you the feeling of a high-class restaurant without being gaudi, just classy. From the ceviche, to fish crusted in plantains with spicy sauce to large shrimp done to perfection to mango flan to churros… all was excellent. One minor detail the chicken fingers ordered came as fish fingers🙂 but luck would have it and my daughter, who hates fish, ate them all. And there’s more - this place has an incredible setting outside: chairs, swimming off the pier in clear quiet water and a swimming pool. Entertainment was perfect with the tantalizing steel pan rhythms. I gotta mention the lychee martini which is my go to drink. It was perfectly mixed and unlike some I’ve had was perfectly sweet with the right amount of liquor. The buffet was all that was promised on the excellently curated Independence menu. Golden Apple and ginger juice on point, fish cakes to die for, pudding and pickled SeaCat! I had to get seconds, light dumplings. Chef Fabian outdid himself today. My guests loved the food fare. Service matched the meal too. Alison and Renee took care of my group and went above and beyond to ensure that we had what we needed. The manager was attentive to the guests and checked in often. This added an extra touch to the experience.
