Drawing upon the rich history of Milwaukee’s craftsmanship we present, Craft. The history of Milwaukee dates to the early 17th and 18th centuries when traders first began to travel through and eventually settle in what is now Milwaukee. Deep European roots brought craftsmen and skilled hands to the area and to this day an ethic of hard work and determination inhabits the spirit of the city. Early on the area was full of coopers, butchers, shoemakers, and farmers. Milwaukee’s beer history started in the 1840’s, driven by the presence of the frontier settlement near the Great Lakes. Immigrants, including Welsh and German settlers, yearned for the native beers of their homelands, so they embarked on making delicious craft beer with techniques from their native countries. What started out as a butcher shop concept, has evolved and changed over the years to become a full-service restaurant, which was solidified with the restaurant's move to a larger space in 2022. At Bavette, the consumer will enjoy complete transparency of its food moving from farm to plate. Although the butcher shop has been phased out, the restaurant still works with the same farms, and uses the same high quality meats on its menu, which consists of a daily changing menu consisting of salads, sandwiches, small plates, pates, cheese, and charcuterie boards. The restaurant truly is a farm-to-table restaurant, sourcing not only the meat but most of its produce from nearby farms. In addition to the highly seasonal menu, there is a small store featuring chef-curated retail items, such as Wisconsin cheeses, local charcuterie, artisanal jams, pickles, salts, vinegar, and oil.     The ambience was one of the best in Milwaukee. We got a seat right by the window, and I love the old architecture inside the building. Our food was delicious, I would highly recommend the sourdough with truffle cheddar and chive butter as an appetizer. The only thing I wish is that they had more steak options. They only had one steak option was $45 sirloin steak. Other than that, it was great!

    My wife and I are big fans of Birch, which is why we dined here on Valentine’s Day. We sat at the chef’s counter and really enjoyed the experience from beginning to end. It’s easy to see why Chef Knall is a 2025 James Beard nominee for best Chef Midwest. The GM at Birch is so personable and acknowledges us on every visit. It’s no wonder his staff is so helpful and courteous. Book your reservation with confidence.

    Went here for Valentine’s Day and it was lovely. The waitstaff were very on top of it, despite how busy it was, and our waitress gave a great recommendation for dessert. The food was also very good, if a bit limited on the options. It was definitely very loud in there as a holiday, and open-concept so not much blockage towards it, but overall still had a fantastic time. Would go again!

    Great experience. We love the setting food and always gives us a warm and cozy feeling! My husband always comments on the coffee. It is our special place to go when we want the best. We are never disappointed. If you want to celebrate this is the place to go!

    All was fantastic! Only compliant was out of their control - extremely cold night and it was chilly when patrons would enter and exit. The drape they put to cover the door helped a little and recognize this isn’t the norm.
