Designated historical, 740 is one of Colorado's two oldest remaining saloons; transformed back to its 1904 roots; a traditional American dining saloon with a turn of the century ambiance featuring a magnificent room dominating bar, built in 1880 by the Brunswick Company,. The copper spit trough, once equipped with running water, still exists at the front of the bar. Louisville, notorious for its drinking, gambling, and illegal activities, evidence of the occasional misunderstanding is the .22 caliber bullet hole in the front bar. The bar offers a selection of craft beers, wines,  handcrafted cocktails and an extensive craft bourbon selection.Dinner Tue. thru Sat.     We arrived at happy hour and stayed through dinner. We started with the spinach dip and ceviche. Both delicious. I had the happy hour old fashion which was smooth and delicious. My husband had the aged ribeye and I had the flatiron steak for dinner. We agreed that I had the better steak. Although a little salty, it was juicy and tender. Great flavor. We had creme brulee for dessert. Not bad but not fabulous. It was more pasty than silky smooth & not enough sugar on top to crack. We will try something else next time.

    We saw this restaurant a few days ago while strolling Pearl Street, and decided to book a reservation for a weekday dinner. Glad we did! Drinks were outstanding, especially their take on a gin and tonic, and our party enjoyed almost all the tapas offerings. Meatballs and mushrooms stood out in particular (gotta try them!), and the cauliflower 'steak' was also a great dish. We definitely will return and recommend it to all the foodies visiting Boulder.
