Tea is made at the kitchen counter in glass pot to perfect coulour, leaves are removed before brought to table. Therefore it doesn’t becomes too strong until the last drop of pot. The only caveat was that we didn't know there was a time limit for how long we were able to be there. I understand the need to ensure people don't linger too long, given how popular the high tea experience is, but I would have liked to have known how much time we had. It came as a surprise when we were told that 75 minutes were all we had, and that they were up.
