The Pink Adobe restaurant stands proudly in the heart of Santa Fe's historic Barrio De Analco neighborhood, which is considered the oldest neighborhood in the US. Founded in 1944 by Rosalea Murphy, an artist and social connector, the restaurant takes its name from the rose-colored adobe plastering on the nearly 400-year-old hacienda that serves as its home. Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

    The Steak Dunnigan's recipe has been changed, not necessarily for the worse, but changed. The steak was, oddly, too thick, thus making it hard to cook rare without becoming squishy in the center. The zucchini appetizer and the churro dessert were excellent. The atmosphere is, quite definitely, duller and less colorful than it once was. Nice, plain, quiet, but dull.

    We were visiting Santa Fe last year and the reservations we had made at a local restaurant were muddled up. We wandered around the plaza area looking for a place to dine and happened upon the Coyote Cafe. We had a wonderful experience. Last year we found the Coyote Cafe by luck. This year we went there on purpose hoping for the same level of enjoyment. We did not. It was even better!! Our waiter, Cliff made sure our every wish was looked after. He orchestrated our whole experience like a conductor. He made our night. His team also consisted of Mandy who delivered the food to our table and Eli who bussed the tables. Mandy knew her stuff and could describe in detail every bit of food on our table. Eli, he if the infectious smile, made sure our table was clean of used dishes and made sure our to go box was looked after. The whole experience was five star plus! So much so that when we got our bill we had to go over it several times because we felt they must have forgotten to charge for some items! It was my sweethearts birthday and Cliff made sure it was a memorable one. We will not hesitate to return there again.

    A great meal -owner and chef greeted us when we came and when we left. Carla did a terrific job guiding us some new flavor adventures. Chef’s moles were terrific with Deck and Salmon entrees - I wanted to lick the plate when I was done. Chef’s surprise desert was very good with a sweet ginger flavor the lasted an hour after the meal ! A little expensive but worth it !
