Flint Creek Cattle Company is a new American steak restaurant that emphasizes ethically raised beef and sustainable farm practices. The dining area is extremely wide open and spacious. There is a large, high vaulted ceiling in addition to floor-to-ceiling windows that lets in lots of natural light and lets guests feel like they are eating outside.     Truly lovely dining experience with friends. We have always had good food here, but the service has been spotty. This time the service was exceptional and consistent with he quality of the food and ambience of this historic venue. Our server’s suggestion of the specialty pork belly dish to share was a hit with everyone at the table. Her service was quick and well timed. She had a good sense of when to let us enjoy our drinks and appetizers and when to appear to take our order. We all enjoyed the sablefish which was wonderfully done in a unique presentation with cabbage. The room is a little noisy. The grounds and hotel are festively decorated for the holiday making it a nice place to celebrate the season with friends.

    This restaurant is amazing. The wait staff was so great and recommended the best dishes for us. We went there for happy hour and I think it’s the best in Seattle! The ribs, burger and the banana crème brûlée are a must!

    As always, both the food and service were excellent. The Chilean Seabass is expensive but it's the best seabass I have found in Seattle. Pasta was also very good too.
