We tried a lot of drinks and tbh all were amazing! About the food. The balam tiradito was delicious, I don’t think I need chopsticks for that incredible dish I rather eat it with a spoon. I have tried the pepitoria crudo two years ago and it was exceptional! This time probably the fish sauce wasn’t the best ingredient to add. However the crispy pepitas were a nice crunch. We tried a fish with fried kale not the best. Pretty bland. The tamal idk what happened to the previous recipe they had with the mani de recaudo that was delicious. This time, the sweet with the pickled wasn’t my favorite. Guisquil wasn’t my favorite, it was a bit too salty and overpowering by the green dust. The sopa de gallina with Gyoza! I would love to have more of this. But the plating style was a bit confusing. Have a broth on the side and the gyoza also has someo broth. Probably pouring the chicken sopa broth should be a better option? I wanted to keep ordering more dishes but the evening was getting a bit mellow from the amazing flavors of the Balam ending to lack of flavor with the fish and kale. But I decided to order two extra dishes the Riguas with Requeson and the Tamal de Chocolate. Riguas were a bit too cakie also the corn flavor got lost between the savory flavor of the cheese. Also 1 out of 3 Riguas was seared nicely the other 2 were a burnt from the bottom. I have tried the tamal de chocolate before but this time it was a bit too stiff. Last time the texture was smooth and creamier. To end the night we had a type of espresso martini and I had a regular coffee. We were told to sit in the hotel lobby as they were not ready to seat people. 10 minutes after our reservation time I made another inquiry and was then first to be seated at the table adjacent the kitchen door. When I asked for something more comfortable I was initially told no until I involved the manager. From this point the service level improvement with a delicious Amuse Bouche and a starter plate. Then downhill again with the waiter placing the wrong order for the entree. The manager corrected the order but we were put behind in the 2 hour limit service featured event. After the entree our tea service was forgotten and we went straight to desert. The tea was later taken to go. In speaking with the manager there was NO concession made by the restaurant to adjust the bill for the lacking experience only an apology. Bottom line, management was not prepared for this PLANNED event and the service suffered for it. The food quality was average at best for this service.
