Jack Timmons grew up in Texas and has lived in Seattle for over three decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience.After more than a year of practicing the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at ‘BBQ Raves’, Jack opened his first restaurant in the South of Downtown (SoDo) area of Seattle – Jack’s BBQ in 2014.At our newest location on the border of Bellevue and Redmond, we serve authentic Central Texas Barbecue with Brisket, Ribs, Sausage and Chicken.     We were sat right after checking in even though it was very busy so that was great. The server was very prompt and the appetizer came soon after but unfortunately the drinks didn’t come until when we were almost done with the appetizer so that was a little disappointing. The lobster roll, scampi and salmon were decent. We also ordered almond cake and it was ok. I wouldn’t get it again. Overall, we had a good time.

    An excellent lunchtime experience. Exceeded our expectations with original and innovation flavors. Delicious dishes with high quality ingredients and tasteful presentation. Not precious "tweezer" style food but cuisine that feels familiar. Deceptively different in the best of ways. It is difficult to describe what the food is like since it is so unique.

    For the PNW area this is a pretty good BBQ joint. I am from North Carolina and had a Dallas person on our table and we both agreed the food was pretty good and the real thing. Service was a bit spotty. Our server was nice, but they were not appropriately staffed on a Wednesday. If you are looking for good BBQ at good prices, this is a good place to visit.
