Daniel Berg is the Cofounder of Bill’s Oyster and Teddy’s Restaurant & Bar. Berg started his culinary career in New York, where he was also born and raised. Daniel attended the French Culinary Institute (NYC) as well as La Scuola Di Cucina (Colorno, IT). After completing culinary school he began working for critically acclaimed and James Beard award–winning Chef Andrew Carmellini. Berg would spend several years under Carmellini working for him beginning at Michelin-starred and three-starred New York Times restaurant A Voce. Berg would go on to help Carmellini open several more restaurants, including Locanda Verde, The Dutch and Bar Primi. He also spent a year working in Italy under Chef Massimo Montaro at the two-Michelin-starred restaurant Principe Cerami. Daniel would go on to work for Chef Daniel Boloud at his flagship three-star Michelin and four-star New York Times flagship restaurant Daniel, as well Eric Ripert’s Le Bernardin.

    Amazing from start to finish. Super personable and helpful waitstaff who helped us figure out the menu and must-have items. Vibe was lively but also intimate. Every dish was the best version of that I’ve ever had. Tuna Tiridito was crunchy and creamy. Fish tacos light and fresh. Zarandeado was a knockout - smoky. Guava cheesecake was rich, but with a good textural balance with the candied pepitas. Can’t wait to come back

    Excellent food and atmosphere. It was lively, if not a little loud. We had four items, including the ceviche, brisket tacos, flautas, and sweet potatoes. I would recommend all. They were all super flavorful. The balance of potatoes and duck in the flautas was a little off (too much potato) which made it a little bland, but the mole sauce hit the mark and helped round out the flavor. We would definitely return and try other items.

    We had not been back to Red Ash since before the Pandemic. Shame on us! Now we certainly will make a new reservation as soon as possible, which will probably be a few months from now. Red Ash is so popular that it is that difficult to get a table. But the wait is certainly worth it. This evening we tried the Octopus a la Plancha at our server, Emma's suggestion. Octopus for our first time. It was wonderfully delicious and tender. For dinner we split Frutti di Mare, a wonderful selection of seafood laid on a bed of the best black and white sphagettini. Cooked perfectly! Emma was the perfect hostess and we were able to reconnect with Brand Favata, our favorite server from six years ago. It seems that very few few employees leave Red Ash. It is such a wonderful restaurant!! We'll be back very soon.
