Every dish was well curated and executed. There were highlights for sure (Aloun Farms corn) and the exquisitely prepared lamb…but overall the entire meal was great. My only suggestion would be to try to improve upon the pacing of the meal. Chef Jeremy and his wife Pauline are the only staff (save for one kitchen helper I saw). This limited front of house staff resulted in long waits between courses while service was executed two tables at a time - we frequently heard the course being described at other tables two or three times before we got our own serving of that course. I can appreciate the need to keep costs down with limited staffing - but efficiency also plays into the overall experience. Our first course was not served until 35 minutes into the 5:00 seating. It was delicious - don’t get me wrong - but sitting for 30 minutes before the first course set the stage for what was to come later, albeit slowly. I would dine here again as I feel the quality of the food deserves it.
