    It's been two months since my last visit to Waterbar. This time I went to celebrate my birthday and sit on the newly covered patio. Mother Nature decided that she wasn't going to allow that. She hit us with a couple of very strong bouts of rain just before my reservation. Instead we were seated at a prime table in the dining room that allowed us a great view of outside and was also great for people watching. We both started with a French 75 that was one of the best, and freshest, I have ever had. There were some things on the menu that I have never seen before so we had to order them. Lori, the pastry chef, made milk bread. It was delicious and served with a fantastic butter. I also had tilefish. I've never heard of it before and it was amazing. A light, flakey white fish that was served with "low country" rice and dried cherries. After going to the restaurant for about 18 years it's nice to know that they can always surprise me and can continue to serve dishes that are stellar in every way. For dessert Lori also made a Dutch crunch cream puff. I was curious because a Dutch crunch roll is hard on the outside and a cream puff is not. Again, stellar. It was served with strawberries and lychee rose ice cream. The combinations are always intriguing and ALWAYS amazingly delicious. Rich also brought out some lemon meringue bites that made me want an entire piece of pie. The lemon was tart and fresh, and the crust was perfect. Yes, I already made my next reservation.
