Inside, you’ll find an underwater grotto decorated with maritime antiques serving botanical cocktails inspired by the renowned Spheres, which house a variety of plants. The food menu offers sea-centric bites, from caviar to Spanish anchovies, but its star is the overhauled Seattle dog—a hot dog with cream cheese. I have seen the light, and it is in a glass. The Brown Butter High at Whiskey by John Howie isn’t just a drink—it’s a life-altering experience. If smooth, buttery bourbon had a love child with the most decadent dessert you’ve ever tasted, this would be it. From the very first sip, I felt like I had been personally hugged by a warm, slightly tipsy angel. The brown butter adds this silky, almost sinful richness, like someone melted a stick of gold and mixed it with liquid confidence. The bourbon? Oh, that deep, smoky magic glided down so effortlessly I briefly considered asking if they offer it by the bucket. Halfway through, I caught myself staring lovingly at the glass like it was my soulmate. By the end, I was contemplating writing a heartfelt thank-you letter to the bartender. Final verdict: Best. Drink. Ever. If you don’t try it, we can’t be friends.

From Aperol spritzes to negronis, excellently curated wine lists, and even Italian beer, there is something for everyone— even the hungry. Food consists of antipasti and small bites, but a few of the famous pastas—half portions are available, too—from next door can be ordered.

Elks Temple, the newest addition to the McMenamins family, calls itself a pub, but its dazzling stained glass windows and chandeliers hint at a grander existence. Housed in a historic Renaissance Revival building dating back to 1916, the bar features large windows with expansive views of Commencement Bay. The crowd-pleasing spot, with a killer brunch, is also a late-night hangout, courtesy of its gourmet burgers and house craft brews. The multi-level venue also hosts a variety of events in its Spanish Ballroom, from live music to comedy.

Our server was very nice. She timed the order so we had plenty of time to enjoy an appetizer before dinner arrived. There were some minor issues with food and drink and I opted not to make a fuss. I hoped for a better dining experience but I made a decision to keep it light and not to say anything. The issues were about quality control behind the bar and in the kitchen. Cheeseburger with no cheese. Beer not cold. First world problems. The turnoff of the night was as we were heading to a show in the ballroom. The ushers were obnoxious. Yelling at the customers, like cattle. No respect. I wish I was their boss. I would have fired them on the spot. Two staff, and one in particular, did not like how customers were lined up down the stairs and the path patrons were taking to access the ballroom. Bear in mind -that’s a facility set up issue, not your customers. Don’t verbally yell at your paying customers, “Up against the wall, up against the wall. No!! NO!! Get UP against the OTHER wall! All of YOU need to be up against the other WALL! I wanted to invite that disrespectful loudmouth to walk down the stairs and talk to us like human beings. It was a training issue. On the upside, the music was great.

Enjoy it all in a conservatory, featuring a retractable glass roof, occupying a 1,000-square-foot patio lined with string lights.
