Featuring Chef Nobu Matsuhisa’s signature new-style Japanese cuisine, Matsuhisa Vail is located in the Solaris Plaza in the heart of Vail Village. Our dining room is open from 5pm nightly. Takeout available nightly from 5-9 pm.

Chef Nobu Matsuhisa’s fusion cuisine draws influence from his classical training in Tokyo and his life abroad in Peru, Argentina, and around the world, showcasing signature dishes such as Yellowtail Sashimi with Jalapeño, Black Cod Miso and White fish Tiradito.

    This is our favorite Japanese restaurant in the world. Highly recommend all of these items. It is a perfect balance of cold and warm and the progression is great. Yellowtail jalapeño Oysters Nobu salsa Cucumber Sunomono salad Miso soup Black cod lettuce cups Octopus, King Crab and Yellowtail nigiri sushi Grilled cauliflower with jalapeño Miyazaki Wagyu beef Tuesday we just walked in and sat at the bar. You need to start lining up if you walk in at 4:30 and you either get last minute cancelled tables, bar, or sushi bar. Otherwise you have to wait for the second turn. For reservations on Christmas we were thankfully in Paris so the timezone was manageable, because reservations open up at midnight of the timezone the restaurant is in. Likely to sell out quickly on the weekends or peak season. Hope this helps!

    Matsuhisa continues to be a crown jewel in a valley of fantastic restaurants. The food is always exceptional with a variety of options to please all palates. The drink menu provides a number of tasty sakes, wines and cocktails. The service is friendly, helpful and attentive. I highly recommend to anybody who is looking for fine dining in Vail.

    After doing Omakase on two separate occasions. I was pleasantly surprised by the service and overall knowledge of staff. However, the two stars overall is due to the quality of fish used. The tuna belly fat and blue fin had a an older texture and flavor. Maybe it was frozen for a long period of time. Also they served me Toro when I ordered Otoro but hey it’s sushi vail, Colorado. Go to aspen if you expect the best. Sincerely Sushi snob

    Unfortunately, I was beyond disappointed by my experience at Matsuhisa Vail and I understand this is not the normal response from those that have dined here so I'm hoping this was just a one-off experience. I will start off by saying- the wait staff was fabulous and this review does not reflect their work. My issue lays with the food itself- its quality, flavor, and presentation. As most would, I came in with high expectations and was enthusiastic about the omakase experience. After the second of nine courses we started to feel like we were waiting for that "wow" dish. We tried to continue on to see the rest of the courses hoping they would be better. Yet they were not. I ended up feeling bored and disappointed. Not only that, but my husband and I both became ill after our meal. We were up all night getting sick. To top it off- it was our honeymoon. We called the restaurant the next day to warn the manager that something they had served the previous night was contaminated. They were incredibly short and really seemed like they didn't want to hear it. A brief condolence was offered then the call ended. Suffice to say we will not be dining here again.

    Server Jeff Wall was top notch. Explained all the dishes. Was very attentive. And just such a nice guy. One of our favorite experiences in Vail for dining.
