Para la cena se han concebido dos menús: uno a la carta y otro para degustar en siete tiempos, maridado con vinos y mezcal.
Las recetas creadas por Pabón rinden un homenaje a la cocina de temporada, brindando protagonismo a la frescura de los productos y sus distintos matices: dulces, ácidos y picantes, enfatizados por el dominio de distintas técnicas de preparación.
