I asked for it to be served Au Poivre style which is usually done on the NY Strip. But Josue the chef was able to do it with perfection. The filet was cooked to a perfect medium plus as I had asked - and the peppercorn crust and Courvoisier sauce added the perfect amount of taste and flavor to go along with it.
