BAYTE, is a modern European neighbourhood restaurant with an emphasis on local sourcing and quality produce in the seaside town of St Leonards-on-Sea. The seasonal menu blends influences from across the globe, with particular reference to Italian recipes, such as hand-rolled pastas.
The meat at BAYTE is free-range and reared on biodynamic, organic Haye Farm in Devon. Vegetables are also sourced from organic suppliers, most of them from English and Japanese vegetable growers Namayasai, and Goat Grid Farm, both in nearby Lewes.

    Every dish was delicious! We were a group of seven on a Saturday lunchtime. We ordered all the small starters to share, and enjoyed this and every course. We loved it!

    Once again the food was amazing but this time the service matched. Maia looked after us with a calm professionalism and knowledge of the menu a true superstar. 👏🏻

    Look, this is our best restaurant. The best food in town - Hastings/St Leonard's/ Old Town. Sometimes when I say this to someone they look at me like: that is a very bold sweeping statement Henry is it not? It might sound that way but it actually isn't. The main supposed competitors are not up there - The Crown, The Royal, The Cove, Farmyard (as I am sure the respective chefs would concur). All of those are ok but Bayte is basically a proper London quality restaurant. If it was in Wandsworth or Islington or Shoreditch it would be fully booked every single night without doubt. The middle-classes in London kill to dine at a superb and unassuming restaurant like this. Now, this being Hastings that is not exactly true but only because customers are not really used to superb food. I am no Jay Rayner when it comes to actually describing the dishes but there is always with every plate a sense of simplicity and quality that pervades all. Speaking of The Guardian, this really is a Nigel Slater-inspired restaurant in many ways. Chefs Jacob and Josh could easily be working in top London restaurants but they have chosen to do a great local restaurant down here in Hastings instead - and we are blessed for that. Josh is also one of Bayte's produce suppliers from his farm out towards Rye. If you have not dined at Bayte yet then I would urge you to get involved and join in the good food revolution .. Bayte - the standard by which all others must be judged.

    We had really splendid dinner at Bayte. The staff were very lovely. The Panelle and artichoke soup were just exceptional. all in all we really enjoyed the experience.

    I would have given a 5-star rating for our evening in Bayte, as the food was delicious and the service attentive and friendly. The only thing that spoiled the evening and negate a 5-star rating were the poor DJ's, who seemed to have no idea that it was New Years Eve or concept of how to get the party started. Having attend Bayte the previous New Years eve when the food and service were equally good as this year, the previous year's DJ had the whole restaurant rocking and the entire clientele on their feet dancing to welcome in the New Year in style. This year however, the DJ's seemed content play muzak that was better suited to lifts and public spaces, rather than a New Years eve party. When the DJ's were asked if they could play music a little livelier and more fitting to a New Years eve celebration, I was described as a middle-aged white man by one DJ and the other DJ continued to give my table "the finger", which I found to be somewhat surprising. Considering that I was the customer, and was only making a request for a more upbeat music vibe, the response from the DJ's was rather rude and unnecessary. Other than the interaction with the DJ's, we all had a good evening, enjoying delicious food and a lovely selection of accompanying wines, supported by great service.
