In the beginning there has been one word in Carlos’ Bistro, Beautiful. The excellence and the experience of the best in Colorado Springs. Carlos (Owner, Executive Chef, and Matradee) provides a warm and welcoming experience to all of our customers, making everyone feel special at home and relaxed.

We are proud to now offer Japanese kobe and wagyu steaks plus burgers and kobe sausages made with kobe, wagyu, and prime meats at Carlos' Bistro as the state of Colorado is now a member of the Japanese Kobe Club.

    Excellent dinner and service! Hands down one of the best dining experiences we’ve ever had! Can’t wait to come back to this special place for another date night!! Ambiance was upscale but still comfortable and not pretentious at all. Carlos made us feel welcome and taken care of. The food was amazing!

    Carlos was a gracious and entertaining host, and the service was as expected at a higher-end restaurant. The meals were all tasty and well-prepared. We had a lovely evening.

    Excellent food, service, and atmosphere. 10/10 would recommend. The bread pudding was phenomenal. A wonderful place to spend a date night!

    The guests felt pressured to order the most expensive items on the menu. They were given a gift card for Christmas that should have been enough for two. They felt pressured to order things they really didn’t want. In fact had to come out of pocket to finalize the bill. 400.00 should have been plenty, but again pressure was applied to them on what to order. Not a good way to get return customers.
