In celebration of Asian American and Pacific Islander Heritage month we are excited to be cooking in tandem with Chef Earl Ninsom and Chef Pui Ketkuaviriyanont of Langbaan in Portland Oregon. About Chef Earl: Earl Ninsom was only 8 years old when he cooked his first dish: a simple rice-and-pork porridge he prepared for his mother when she fell ill. He hasn’t left the kitchen since. Today critics regard the Bangkok, Thailand-born restaurateur among the most talented chefs in Portland, Oregon, where he helms a small empire of nationally acclaimed Thai restaurants — including Langbaan, EEM, Yaowarat, PaaDee, Hat Yai and Phuket cafe. Yaowarat, EEM and Langbaan named as Oregon Restaurant Of The Year in 2024, 2019 & 2014 respectively. In 2024, Langbaan won a James Beard Award for Outstanding Restaurant. Ninsom was a James Beard Award Finalist for Best Restaurateur in 2022. Before opening his first restaurant in 2008, Ninsom — who holds degrees in marketing and master degree in international economics — traveled the world pursuing a career in international business. About Chef Pui: Kitsanaruk went to a culinary school in Bangkok, Thailand and spent times at Nahm (World’s 50 Best restaurants in 2013) and Bo Lan (Asia 50 Best restaurants in 2013), he was the chef de cuisine at Er in Bangkok before he moved to join Langbaan in 2017 where he is now an executive chef and partner. We offer a multi-course tasting menu for $259 per person. An optional global beverage pairing is available for $119 per person. A $100 per guest security deposit is collected upon booking the reservation. The deposit will be credited towards your final check after your experience at the restaurant. Love Commis. I have been there several of time and each time felt like the first. Service is so professional but not pretentious. The servers not only are passionate about the food, but their knowledge of the food and preparations were impressive. I was always treated like a guest and not a customer. And the bread! I’d book the dinner just to get the bread.

I finally got the reservation for myself to celebrate my birthday, even though it was 2 weeks ago. I could not get a seat at the time. I am so glad to have a special evening treating myself to a wonderful belated birthday dinner. The staff were all so professional. I got a birthday card with all their initials, and a few beautiful sweets with a birthday candle. It feels so special. I really appreciate their thoughtfulness and efforts. The food were delicious and so delicately made, each like a piece of art. Thank you Commis. Highly recommended!

From the beginning to the end I noticed that every employee knows the reason to be there: to serve and provide a high end quality service. The team really make you feel special. Little details as to walk you to the bathroom, explain the wine history before you drink and the intricate fabrication of the food. The postcard signed by the staff for my girlfriend birthday. Lot of details and they cover all. THANK YOU for ana amazing night.

The restaurant decor was modern and clean. The servers polite, informative and accommodating and well dressed. We were celebrating my husband’s birthday and he got a few surprise “gifts” during dinner. He found an insect crawling on his food. He took a video of the little guy zipping along. When we told our server, the dish was replaced with many apologies. Next, the crab contained a sharp shell and hen gristle attached to bone necessitated he spit into his napkin. We understand these things happen time and again. It’s not a huge deal but for $1000 for 2, there was no value and we were glad it was just us and we weren’t hosting guests. We had a good time, laughed a lot, we enjoyed the interesting food presentations and tastes. The wine pairing definitely enhanced the flavors. However, at the end of the experience I asked my husband to look around and take it all in because we probably won’t be back.

Came to Commis with my wife for our anniversary. The exterior is unassuming, but inside is nicely decorated with an open kitchen. Food: The tasting menu started off strong—fantastic seafood and bites. We saw James working and made eye contact to which he gave a nod of acknowledgement; though my wife wished we got to say hello. Anyways we both loved it at the beginning. However, the main course was a a bit disappointing. The hen dish was confusing and not enjoyable, and the $30 wagyu supplement was chewy, slathered in BBQ sauce, and far from melt-in-your-mouth. For $30 we expected...different. The fried rice was mediocre. I would say of the 10 courses, 8 were phenomenal, but the mains need to hit. Atmosphere: Cozy but uncomfortably cold. The temperature fluctuated, and despite wearing layers, I was chilly most of the meal; I should've spoken up so thats on me. Value: The bill was around $750 with no drinks, which felt steep given the disappointing main courses and the unexpected $12 coffee charge. We’ve dined at many Michelin-starred spots, and while we don’t mind paying for quality, this missed the mark. Plus, usually when asked if we wanted coffee or tea, it is complimentary, just saying. Overall: Commis had a great start, but they just need to swap out the 2 dishes and perhaps re-evaluate the $30 wagyu because that wasn't good. Now, maybe it was just a hiccup for our table, but for us, for the price we paid we left a bit disappointed.

Commis is an outstanding dining experience. The service is wonderful and the quality of the servings is terrific, both in terms of taste and presentation. Our only slight quibble is that we would not engage in the wine pairings on our next visit. Several of the wines did not seem to us to be up to the quality of the food they were paired with. We would opt for a good bottle of wine instead. But, overall, Commis is terrific.
