Chef Luis Arellano is a cook with a spirit that is both attached to his roots and creative and evolutionary.

Una experiencia bastante decepcionante. Me interesaba ir a Criollo para probar una propuesta gastronómica interesante y única, desafortunadamente no fue así. Hay una posibilidad que por la temporada, están atascados y esto está afectando su servicio y oferta, pero no es aceptable seguir aceptando tantas mesas si no pueden cumplir con la demanda. Comí una degustación vegetariana, y faltaba en varios aspectos que esperas de un restaurante de este calibre y con este costo: poca complejidad de sabores y técnicas de cocina bastante básicas (la mayoría de las verduras fueron cocidas sin sal ni marinadas ni preparadas de otra forma para resaltar su sabor y textura). Adicionalmente, los emplatados y experiencia estética dejaron mucho para desear. La mayoría de los platillos venían medio fríos, el servicio super lento, al final ni pedí una bebida porque llegaron a tomar nuestra orden ya cuando había empezado la degustación. La degustación tardó 2 horas, con esperas de 20 minutos entre platillos. Entiendo que puede pasar en temporadas altas, pero cuando estás pagando este precio, esperas más. Después de varios tiempos poco interesantes, llegó el postre. Lo cual fue un bizcocho de chocolate que sabía como un pastel del super o una pastelería muy genérica, con un frosting sabor chai bastante básico, helado de vainilla que ni sabía a la vaina, y una mermelada de higo. Siempre terminamos nuestra comida, pero dejamos el postre, porque realmente no valió la pena.

The food and drink were excellent. So delicious. Next level. Service outstanding as well. Every need was anticipated. The staff’s English was excellent as well. Do yourself a favor and treat yourself!

The waiter was extremely rude. We only know a little Spanish and the waiter was impatient with that. In fact, he never returned after the first visit to the table and sent the water person to take care of us - who by the way was very nice. The waiter also refused to bring us the printed menu so that we could review descriptions of the meal. I had to go to the front and ask the hostess to help us get a copy of the menu. For the type of restaurant that Criollo hopes to become - it is necessary to have a wait staff that is patient with international clientele. The experience was so bad it ruined the meal.
