El Xolo revolves around native corn and local products, drawing on over 8 years of research into the Salvadoran territory. We use ingredients sourced from indigenous communities across different regions of the country, cutting out intermediaries to connect directly with producers and create a direct impact on these communities.

We work in collaboration with various permaculture, biodynamic, and sustainable fishing projects, all in favor of the environment, which play a key role in the communities surrounding these initiatives, dignifying the work of their producers.

We are supported by Claudia Alfaro Moisa, Curator of the National Museum of Anthropology, Dr. David J. Guzmán, archaeologist and museologist.

Each creation reflects the rich tapestry of Salvadoran folklore, elevated to contemporary cuisine through both ancestral and modern techniques. Our tasting menu consists of seven courses, offering a rollercoaster of the beauty and wonders of our country. Pairing with wines and/or signature cocktails, available for an additional cost, enhances this experience, where each bite connects you with our roots and celebrates our presentation of the new Salvadoran cuisine.     We had the tasting menu — not listed, but you can ask for it. And hey, who doesn’t like surprises, right? So we went for it. The courses were well-balanced and absolutely Michelin star worthy. The wine? Excellent. But then came the bill. Excuse me? A 20% tip automatically added — while everywhere else in El Salvador we were charged 10%. I didn’t want to spoil the evening, so I paid and left quietly and we won’t be going back. The restaurant prices are rather high for El Salvador. Also a 20% tip included on the bill is unprecedented. That was our spoiler of the evening.

    Overall the drinks and cocktails were the highlight of the evening. The loroco martini like, was unique and delicious! We tried a lot of drinks and tbh all were amazing! About the food. The balam tiradito was delicious, I don’t think I need chopsticks for that incredible dish I rather eat it with a spoon. I have tried the pepitoria crudo two years ago and it was exceptional! This time probably the fish sauce wasn’t the best ingredient to add. However the crispy pepitas were a nice crunch. We tried a fish with fried kale not the best. Pretty bland. The tamal idk what happened to the previous recipe they had with the mani de recaudo that was delicious. This time, the sweet with the pickled wasn’t my favorite. Guisquil wasn’t my favorite, it was a bit too salty and overpowering by the green dust. The sopa de gallina with Gyoza! I would love to have more of this. But the plating style was a bit confusing. Have a broth on the side and the gyoza also has someo broth. Probably pouring the chicken sopa broth should be a better option? I wanted to keep ordering more dishes but the evening was getting a bit mellow from the amazing flavors of the Balam ending to lack of flavor with the fish and kale. But I decided to order two extra dishes the Riguas with Requeson and the Tamal de Chocolate. Riguas were a bit too cakie also the corn flavor got lost between the savory flavor of the cheese. Also 1 out of 3 Riguas was seared nicely the other 2 were a burnt from the bottom. I have tried the tamal de chocolate before but this time it was a bit too stiff. Last time the texture was smooth and creamier. To end the night we had a type of espresso martini and I had a regular coffee. Once again the coffee cocktail was delicious and the roasted coffee americano was also nice!

    We went for our 5 year wedding anniversary. The staff was very friendly and top tier in their service. I alerted them that I have celiacs disease which is a severe gluten allergy. They had gluten free beer and I felt that I had lots of options for dinner. All of the food was delicious and I felt that I was having a traditional food Salvadoran experience at the highest level of service and quality. Even the dessert was amazing! I will be visiting this restaurant each time I visit El Salvador.
