El Xolo revolves around native corn and local products, drawing on over 8 years of research into the Salvadoran territory. We use ingredients sourced from indigenous communities across different regions of the country, cutting out intermediaries to connect directly with producers and create a direct impact on these communities.

We work in collaboration with various permaculture, biodynamic, and sustainable fishing projects, all in favor of the environment, which play a key role in the communities surrounding these initiatives, dignifying the work of their producers.

We are supported by Claudia Alfaro Moisa, Curator of the National Museum of Anthropology, Dr. David J. Guzmán, archaeologist and museologist.

Each creation reflects the rich tapestry of Salvadoran folklore, elevated to contemporary cuisine through both ancestral and modern techniques. Our tasting menu consists of seven courses, offering a rollercoaster of the beauty and wonders of our country. Pairing with wines and/or signature cocktails, available for an additional cost, enhances this experience, where each bite connects you with our roots and celebrates our presentation of the new Salvadoran cuisine.     We went for our 5 year wedding anniversary. The staff was very friendly and top tier in their service. I alerted them that I have celiacs disease which is a severe gluten allergy. They had gluten free beer and I felt that I had lots of options for dinner. All of the food was delicious and I felt that I was having a traditional food Salvadoran experience at the highest level of service and quality. Even the dessert was amazing! I will be visiting this restaurant each time I visit El Salvador.

    Tried Xolo on account of rating among top 100 restaurants in Latinamerica, and only one in El Salvador. Been there, done that. Not going back. First, I asked for fresh water, but they said they did not serve water pitcher; until I told them that otherwise I would not come back. Bottled water 1 lt. was $7 and I can’t taste the difference. They changed their mind and complied with pitcher of fresh water without ice, nonetheless they charged me $ 4 without prior notice. The food is Salvadorean fusion, with some exotic ingredients, like kimchi sauce and hummus. Some dishes were good, other left a lot to be desired. The cochinita plate was tiny, too small to make more than 3-4 mini tacos— 5 people were tasting and sharing. Then they ran out out of corn tortilla for the tacos. Then, they ran out of bread. And to start, they did not have fresh fish for recommended dishes prior to arrival. Prices for dishes were steep, more so for very small servings, which they claim are meant to share and sample. Overall, I am not going back, and would not recommend it. Try another restaurant instead in San Salvador.

    Amazing food and service. Alfonso explained the historical context behind each course. I loved catching the chef watching to see my first-bite reaction. The cooking is done with love and pride.

    The food was pretty good. The service however, was lackluster at best. Upon coming in on time, we were sat down and had to wait over 15 mins before anyone came to offer drinks. Once we ordered food, it took over 20 mins to get the food. You can get better service at a Denny’s to be honest. It was really disappointing because I was really looking forward to come here being that it’s the first and only Salvadorian restaurant that’s in the top 50 best restaurants in Latin America 😞
