Southwestern inspired restaurant and tequila bar opened in Silverthorne, January, 2022. Located inside of Hotel Indigo, we open at 7am every day and serve breakfast and dinner along with happy hour specials. With bison, poblanos and cactus, our menu features ancient ingredients in modern dishes. We feature over 200 tequilas, mezcals and sotols behind the bar.     Good meal and less than outrageous prices. Mahi tacos were solid, vampire tacos were solid. Fried chicken sandwich…..meh. Don’t bother with the cactus fries. Cocktails were great. All good could use more flavor, but it’s tough to please a New Orleanians palate.

    We had a dinner. Party of 5, 4 adults and 1 kid. We had a bill for 470$ and for some reason they included tips 20% for 77$! As far as I know tips are included for party of 6 or more? Why tips were included for 4 adults? Since when kids are included? We asked a server and he said their manager said that ! I don’t think that’s right, service can be better

    We went for late breakfast on Saturday and had wonderful Bison Eggs Benedict and French Toast. We’ll be back to try dinner!
