Executive chef: Peter Merriman

From the OpenTable editors: The LA Times once called Peter Merriman “the aloha Alice Waters” because of the chef’s lasting reputation for championing local ingredients. At Merriman's, which first opened on the Big Island in 1988, that translates to updated Hawaiian classics like macadamia-crusted mahi mahi and taro falafel. The group blazed trails across four islands by 2018, and the latest Honolulu location stands out for its wild green-and-white floors and jungle prints.


Philosophy

All of Peter Merriman's restaurants share a common mission statement: Do the Right Thing! Every member of the staff is taught to respect the `aina (land) that feeds and the people who produce the food, to be proud in their work, and to take responsibility for making sure every customer has a memorable dining experience.

    We sat outside where street noise was moderate. First let me say the servers were very polite. This is a very busy establishment and unfortunately my wife’s meal came out wrong. That put pressure on us for eating our meals at different times.. Our fish that night was tasty but the variety of seafood was limited. I’ve been to other Merriman locations and this one seemed a bit more busy and hectic. I would give it another try on a less hectic time period. The restaurant is typical known as a very nice experience.

    I made a reservation for our anniversary night. We were seated prompted and treated to glass of champagne. Food was great and came out quick. French onion soup was amazing, wish it came with more. I had the Mac nut mahi and it was delicious. Wife had the bolognese which was also really good. Portions were small enough that we didn't have leftovers. Our server Max was on point as well. Overall very good dinner and we'll be back!

    The guy who sat us and got our order started was so welcoming and personable. Didn’t get his name but he had an aloha shirt on and black rimmed glasses. Then our server (May? Sorry can’t remember) took over and she was great also. Our favorite dishes are the poké and taro hummus!! We order 2 of each! Even our kids have their favorite dishes also which is such a win for us! The steak frites which was cooked perfectly medium and the kids cheeseburger.

    Admittedly my expectations were high and I was excited and expecting excellent dishes to be served but when our plates arrived my first impression was looks kinda like something from Sizzlers. It was nothing like the description and the fries were generic. My wife had the Salmon and it was a tad bit extra blackened on one side. The pupu’s were great I enjoyed the smoked oysters and string beans dishes. I’m sure they would be a great place to have pupu’s and drinks for happy hour.

    I had the Cast Iron Chicken. It was very moist and tasty. Because it was served in a cast iron skillet, it stayed hot for a long while, too.
