From the creators of Sweet Basil in Vail Colorado comes a fresh, innovative new restaurant opening December 2012. Aptly named Mountain Standard, this rustic and relaxed tavern aims to set a new standard in the Vail valley by using an ancient form of cooking.

The majority of Mountain Standard’s menu will be prepared via the most primal cooking method: over an open and live wood fire. The only restaurant in the valley to devote themselves to this age-old way of cooking, the food at this exciting new restaurant will have rustic, bold and honest flavors, focusing on the purest ingredients in the Rocky Mountain region and beyond.

Service, like the cuisine, will have that perfect balance of providing a first class dining experience with a more casual vibe. There is no smoke and mirrors here - no fuss - just simple, honest, from the heart service and cooking. The beauty of the creek side location is mirrored by the high energy vibe of this dynamic restaurant.

Fabulous birthday lunch. We each ordered something different. The birthday girl really enjoyed her hamburger. The second gal liked the walleye, but thought a lot of breading. My chicken salad was good, but preferred last year’s preparation more. The apple pie was a surprise winner, as we weren’t sure about the addition of bacon.

Been here several times over the years and usually a great experience. Last night had a few problems: 1. After making a reservation a month in advance for a busy holiday week, was seated in the bar area which was disappointing. 2. Bartender yelling banter with bar patrons with no regard for the guests dining. 3. Brought the appetizers after the soups/salads. 4. Ordered chicken from kids menu and server directly asks my 9YO what she wants to sub since they were already out of chicken (it was 6:15pm). 5. Wedge salad changed and wasn’t good. 6. Pork shank decreased substantially in portion size from previous two visits. 7. Server overall not very friendly for the amount of money spent. Maybe save your money and head over to Pepi’s instead.

Hi Rich, thank you for your honest feedback—it helps us improve our service. When reservations open 30 days in advance, our system spreads bookings across the dining room, including the bar. We encourage guests to specify seating preferences, though we can’t always guarantee them. I’ve noted your preference for future visits. As you can imagine, running a restaurant in Vail has its challenges. A snowstorm delayed our food deliveries, due to Vail Pass being closed, leading to shortages like the rotisserie chicken you mentioned. We apologize for that. We also value your feedback on the pork shank, wedge salad, and server, and will address these with our team. We strive for an exceptional experience and hope to have the chance to provide that on your next visit.

Fun vibe and good food but we basically got kicked out after 75 minutes. And it was not subtle….we were still enjoying our lunch and the check was on the table and they asked if we wanted to go cups.
    Mountain StandardResponded 5 days ago
Hi Jessica, thank you for taking the time to give us your honest feedback. During the busy holiday season, we are often fully booked for both lunch and dinner, which means we do need to adhere to our reservation times. While we couldn’t offer more time on this occasion, we hope to be able to accommodate you with an extended period during your next visit. We’re happy to note this for you, so you can relax and enjoy your meal when you return.
