Why they're an Icon

Executive chef: Chef/Owner John Carver

From the OpenTable editors: It can take months to get into Chef John Carver’s wildly popular Italian restaurant, where there’s a custom woodfired grill at the heart of the industrial space. But it’s worth the wait for fresh pasta and epic steaks, like the cappelletti “bishop’s hats” stuffed with spinach and sauced with brown butter, alongside a 50-day dry-aged porterhouse “la Fiorentina.” Don’t miss the charred veggies, like roasted vine tomatoes with creamy burrata, and wash it all down with a house negroni.

We dined at Red Ash for a date night. We have been before but had forgotten how outstanding the food is and our server was very attentive as well. A perfect meal!

We visited for our anniversary and had an overall enjoyable experience. The dining room had a unique ambiance—an industrial-chic aesthetic that felt like a fitting tribute to Austin’s character. The hostess was incredibly welcoming, and while service throughout the evening was generally decent, it could’ve been more attentive. That said, we had a late reservation, so we gave some leeway. The food itself was a bit of a mixed bag. For our first course, we tried the snapper crudo, butter clams, bone marrow, and burrata. The crudo was a standout—bright and refreshing, a perfect palate cleanser. The bone marrow was another highlight: rich, flavorful, and expertly prepared. Unfortunately, the butter clams didn’t leave much of an impression; the grana crumbs overwhelmed the dish and didn’t complement the clams well. The burrata, despite being a bestseller, was underwhelming—the aged balsamic didn’t come through, and the dish as a whole felt unbalanced. For the second course, we had the bolognese and the blue crab taglioni. Both were strong dishes—the bolognese had a satisfying mouthfeel, and the taglioni was well-executed and definitely worth trying. Our third course included the halibut and cauliflower. The halibut was beautifully cooked, but the accompanying sweet corn risotto didn’t quite work—it felt out of sync with the rest of the dish. The cauliflower was just okay, nothing particularly memorable. All in all, a good experience with some clear culinary highs and a few missteps. Worth a visit, but with tempered expectations depending on your choices.

Food, service were outstanding. Highly recommend. Incredible dining. With one caveat. Wheelchair access was barely acceptable. Almost all seating is not wheelchair friendly. High tops, booths with a step up, etc. Two small areas where a wheelchair can get to a standard height table. And both are very small tight areas. It made for an uncomfortable seating experience. Most of the staff was incredibly helpful in accommodating.

As much as this place was hyped, it just fell flat for me. The food was almost over flavored and did not seem well balanced. Service was pretty bad-several mistakes on the orders we placed, again on the checks and I was shocked that with all the errors made by our server they did not send a manager to apologize and/or comp part of the meal. We had a large group of eight and had booked months in advance- it all felt very sloppy. Not sure l'd recommend this place to anyone. Several other great Italian restaurants in Austin with much better standard of service.

Still one of the best meals in town, in my opinion. I’ve yet to have better garlic bread anywhere. The chicken, steak, pasta, and dessert dishes we got were all top notch, flavors on point. Excellent service- Joel took great care of us. The only slight downside is a lot of the 2 tops are really close together so there is some loss of privacy. Understandable given the demand for the restaurant and trying to accommodate as many as reasonably possible. Red Ash is solidly on our repeat list.

Another great night at Red Ash only thing that wasn't amazing was the octopus. It was just ok. We booked our return trip before leaving. Can't wait to go back
