Restaurant Olivia is a pasta-focused restaurant located in Denver’s Wash Park neighborhood. Olivia is the second project from chef Ty Leon, beverage guru Austin Carson, and hospitality maven Heather Morrison.

Each evening we open the doors to our restaurant as if it were our home, welcoming guests with warmth and graciousness. We believe you’ll feel our attention to hospitality the minute you step inside.

We draw inspiration from classic Italian dishes and the traditions that bring them to life, but we also feature flavors and recipes from around the world. Our food is made with care and intention. We source our ingredients from organic and local producers whenever possible. Our beverage program features expertly-crafted but playful cocktails, alongside an Italian-focused wine list.

We look forward to sharing with you our passion for outstanding food and service.

Few wineries in Italy, let alone the world, have a legacy like Vietti. The family helped shape what we now know as the world-renowned Barolo and Barbaresco regions, revived nearly extinct grapes such as Arneis, and invested in new territories, spearheading the revival of Timorasso. We’ll celebrate these remarkable accomplishments while sampling six classic Piedmontese wines, including Barolo and Barbaresco, perfectly paired with Chef Ty’s five Piedmont-inspired courses. Urs, who oversees all world export markets and is a passionate advocate for everything Piedmont, will preside at our communal table, sharing his wisdom and anecdotes from this historic winery. We are thrilled to host this event as the kickoff to our 2025 wine dinner series

Join us as we launch our 2025 Apericena Wine Class Series with the acclaimed Barolo producer, Burzi. Our wine director, Scott Thomas, and Caterina Burzi will lead an engaging conversation around our communal table, exploring the world of Barolo, Nebbiolo, and the Burzi family farm in La Morra. The tasting includes the full Burzi lineup, including two vintages of their coveted Capelot Cru wines, along with Barolo, Langhe Nebbiolo, and traditionally important, Barbera d'Alba. Seven wines in total. These evenings combine learning with a relaxed dining experience featuring a light two-pasta dinner, chef-curated charcuterie, and the company of like-minded wine enthusiasts around our communal table.

Learn the art of handmade pasta from Olivia's pasta whisperers. These are hands-on classes, be ready to roll up your sleeves and roll out the dough. Our chef team will walk you through Olivia's tried-and-true noodle recipes, sharing stories of their favorite ingredients and techniques, as well as instructions for cooking the perfect al dente dish. Never kneaded? No problem. Classes are beginner-friendly and expert-approved.

Once again, inspiring food, spot on service, Greg, our server was informative, witty, and had great suggestions. Everything is exceptional imho. Just wish the parking was better. Even better, wish they would open one on S. Pearl St.

Food was only ok for the price. The time between courses was way too long, almost 3 hours for 5 courses is ridiculous. Our server was great though.

NYE was our first time dining at Restaurant Olivia. We had an amazing time. The service was great (thanks, Phil & team), the sommelier Scott was super knowledgeable and accommodating, and brought out the wine bottles for each pairing so I could take pictures to save in my wine app, and the food was delicious. Additionally, despite being the early seating on new years eve, we were never rushed. We will definitely be going back.

Amazing food and the service is top notch. A bit pricey but you feel like they are working for it. The warm bread they serve with the 1st course is unbelievable - I ordered some to go. All their pasta dishes were excellent. We had the tasting menu, no regrets. I can’t wait to go again.
