th_prsrv (pronounced The Preserve) is a tasting menu concept from Choctaw tribal member David Skinner and Thai native Benchawan Jabthong Painter.

These two accomplished chefs invite you on a journey through time exploring the evolution of the cuisine of their ancestors and of the unlikely inspiration both cultures received from one another through the cross-pollination of ingredients brought about by European exploration.

th_prsrv is at once an indigenous restaurant exploring ancient techniques through modern presentation and at the same time a statement proudly declaring: true progress is only possible when we explore and understand the forgotten past.

It was an entirely new experience - don't have anything to compare it. Overall, very interesting philosophy and have encouraged friends and family to try it.
