Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

     I haven’t had this much enjoyment and satisfaction at a restaurant in a very long time. Impeccable service, the decor is amazing , and it gets even better when describing the food . Ask for the Chef’s specialty soup.. it will knock your socks off .

    From the moment you walk through the door, you know that this experience will be special... The staff offered warm greetings, and the bright Mexican art gave off positive energy. Our server, Nick, brought a sampling of moles, with perfectly tiny tortillas, with a beverage menu. We enjoyed our cocktails (a seasonal special with mezcal and fernet for me, sangria roja for my husband) as we learned about the moles. All before the food menu was presented. We shared our starters, which gave us a great opportunity to sample a variety of flavors. The Azteca ceviche was bright and fresh, with creaminess from perfectly ripe avocado and a bit of zing from swiping it through the salsa rimming the dish. The special fois gras with raspberry sauce was sinful, with the acidity of the raspberry perfectly balancing the indulgent liver. The pulpo special was some of the best pulpo I’ve had, with crispy bits of pork belly and a little chili. (It was very rich though, and might have benefited from a bit of citrus or fennel or similar freshness alongside to complement it.) The signature soup, Sopa de Amor, was incredible and well worth the hype. Definitely try it! As I’ve experienced in many high end restaurants, the entrees often aren’t as interesting as the starters, but they were good. My husband enjoyed his filet. And when there was a glitch with my entree, everyone (Nick, Francisco the GM, even Chef Olea) graciously went above and beyond to resolve the issue. And then came the incredible desserts! My tres leche was both light and indulgent (as the best ones are), and my husband ordered a chocolate poblano ice cream with sweet potato chips which was delicious and unique. And if life wasn’t already sweet enough, our waiter brought us the chef’s signature dessert to try as an apology for aforementioned glitch. I won’t spoil the surprise, but I will suggest trying it! We’re so happy we had the opportunity to experience Sazón and hope to dine there again next time we’re in Santa Fe.

    We went to Sazon for my husband’s birthday and had an amazing experience! Our service and the food was tamazing. Francisco is such a top notch General Manager and always makes our dining experience special; no matter what. I would highly recommend this restaurant in Santa Fe! Our bartender and waitress were awesome as well. Always make you feel warm and welcome!

    Perhaps my expectations were too high, however for a dinner where I will spend over $100 per person, I think maybe not. The reviews were great, but our experience was only average. To start, for a high-end restaurant I expect that I will have difficulty choosing between great appetizers, mains, and desserts. At this restaurant, the choice was more a process of elimination...this doesn't look good, that doesn't look good, I guess we'll have to go with this one. So the menu needs a serious re-think in my opinion. The dishes we ordered were fine, but not overly memorable. The chef seems to have a sweet tooth, as several of the dishes had a sweet element that didn't belong, at least to my taste. Also, the website, promos, and serving staff talking points were all about the chef, awards, "best in state soup", etc. Perhaps it's time to stop looking at the past and focus on the future? Overall, if this had been an $80-100 meal for two instead of $200+ I would have said it was good. But it did not deliver at the requested price points.
