Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

    A great meal -owner and chef greeted us when we came and when we left. Carla did a terrific job guiding us some new flavor adventures. Chef’s moles were terrific with Deck and Salmon entrees - I wanted to lick the plate when I was done. Chef’s surprise desert was very good with a sweet ginger flavor the lasted an hour after the meal ! A little expensive but worth it !

    The entire experience was amazing! Our waitress Alicia did a perfect job explaining the menu. The soup amor was unreal as were the mole dishes and the dessert!

    Everything about this restaurant was perfect. We had a cocktail at the bar, made according to our taste by Gerardo - perfect. Then on to the cozy dining room. Alycia was an amazing server - expertly explaining our options, describing the dishes and drink pairings and working with the kitchen to manage the flow of our 9 course degustacion menu. She was the perfect mix of friendly and professional. Each of the courses was absolutely delicious and some dishes just mind blowing in the best possible way....the first course dessert was a symphony of flavors that you would never think to put together but Chef Olea worked his magic. Other standouts were the Sopa de Amor (another artful mix of flavors), the colossal white shrimp and the pork belly with roasted corn tortillas. And the front reception, kitchen and floor staff worked seamlessly (and unobtrusively) together - perfect.

    The food and service were very good. The drinks are very overpriced! It was $22 for a margarita with very little alcohol in it.

    The service and atmosphere were outstanding. My husband ordered the sea bass which was overly salty. I ordered the duck which first came out as overcooked dry medallions. They redid the order - again medallions which had been seared. It appeared they cut the breast then seared the pieces which was odd. The moles are outstanding. We may have just missed on ordering but took the recommendation of our server.

    The food is absolutely incredible. I have not one negative thing to say about that. We participated in the tasting menu, which we’ve done at many places in the US and in the UK. If Michelin stars were awarded in Santa Fe, Sazon would absolutely get at least one star. We had an unfortunate experience that was not at all the fault of the restaurant—an unruly 10-top was near us. The restaurant recognized the impact on us and fell over themselves apologizing. Clearly, it is a chef and crew that take what they do very seriously.

    Sazon was absolutely amazing. Hands down the best Moles I've had in my life. The servers are well trained, friendly and helpful. Every single course was delicious with new flavor profiles. The chef makes the rounds to each table to greet guests which was a lovely touch. I 10 out of 10 recommend.
